This Greek dandelion salad is simply made by boiling the greens until slightly tender, and then tossing them with olive oil, lemon juice and salt to taste. This salad is often accompanied by a side of fish. You can find dandelion greens at your local grocery store year round!

- juice of one lemon
- 1/2 cup extra virgin olive oil
- salt to taste
