Pancakes are a favoured breakfast meal in our house! When prepared with the right ingredients, they can make for a very healthy start to the day. If you are looking for both a delicious and highly nutritious recipe- I have just the one for you! I use spelt flour, which has a gluten component that is easier to digest than regular wheat flour and it is also more nutrient dense. I like to incorporate chia seeds for added omega 3, calcium, magnesium, fibre, protein and phosphorus. I use coconut oil for it’s wonderful heart and brain health properties (among many more). I also use honey, as an antioxidant rich sweetener!
- 1 1/3 cup spelt flour
- 1 tablespoon baking powder
- 2 large eggs, beaten
- 1 teaspoon honey
- 1 cup milk
- 1 1/2 tablespoons coconut oil
- 1/4 cup chia seeds
- honey or maple syrup for drizzling over pancakes
- nuts and or fruits for topping pancakes
- coconut oil to grease skillet
In a medium size bowl, combine and beat the eggs, honey, milk and coconut oil. Then stir in the spelt flour and baking powder followed by the chia seeds. Beat until smooth and free of lumps (I sometimes use a food processor for quicker results). Spoon 1/4 of the batter onto greased skillet over medium- high heat. Cook until bubbles appear on top, about 3 minutes. Flip and cook until bottom is golden brown, about 1 minute. Top pancakes with drizzled honey or maple syrup, as well as nuts and or fruit.
