Feta and Kale Stuffed Chicken Breasts

Feta tastes great with just about everything- from watermelon to pizza! When incorporated into meals, it seems to make everything look and taste gourmet! In this recipe I use feta along with sauteed kale, onion, garlic and red pepper flakes to stuff herbed chicken  breasts. The flavour intensity is off the charts! Kale is a great green to incorporate into your diet as much as possible. It is one of the healthiest vegetables on the planet; as it has very high concentrations of antioxidant vitamins, A, C and K. You will love this fancy, yet very easy recipe! Give it a try!


  • 4 chicken breasts
  • 3 cups kale leaves, chopped (stem and rib removed)
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1/4 teaspoon dried chilli flakes
  • 1 cup feta cheese, crumbled
  • olive oil (for drizzling over stuffed chicken breasts)
  • rosemary & freshly cracked black pepper (for sprinkling over top of chicken breasts)


Heat olive oil in a large skillet over medium high heat. Saute the onion and garlic until soft and then add the kale, and chilli flakes. When the kale has softened and caramalized along with onion and garlic, take off of heat. Stir in the feta. Cut a slit along one side of each chicken breast and stuff them with mixture. Place stuffed chicken breasts in baking dish and drizzle with olive oil and a sprinkle of rosemary and freshly cracked black pepper. Bake, covered, at 350 degrees F for 30 min and uncovered for 10 minutes.
