These deliciously lemony herbed potatoes, are a wonderful accompaniment to chicken, lamb or beef. They will melt in your mouth and send your taste buds soaring!
- 6 medium sized Yukon Gold potatoes, peeled and quartered
- 1/2 cup olive oil
- 1/2 cup water or chicken broth
- juice from 1 1/2 lemons
- 1 teaspoon Dijon mustard
- 2 teaspoons oregano
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 teaspoon salt
Place cut potatoes in a large bowl. In a small bowl, whisk all of the ingredients together. Pour marinade over top of the potatoes and toss until potatoes are coated well. Arrange potatoes in a single layer in a baking dish and bake uncovered at 400 degrees F. for approximately 45-60 minutes or until potatoes are fork tender, golden and slightly crispy around the edges.
