Tzatziki sauce is a delicious, creamy, garlicky accompaniment to grilled meats and even tastes great when spread atop bread! You will love this simple recipe!
- 3 cups strained or Greek yogurt
- 10 cloves of garlic
- 1 English cucumber, peeled
- 1 cup fresh dill
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- salt and freshly ground pepper to taste
Spoon yogurt into a mixing bowl. Quarter the cucumber lengthwise and trim the seeds off. Dice the cucumber very finely. Using a food processor, combine the garlic and dill. Pulse until finely chopped but not pureed. Mix all of the ingredients into the bowl of yogurt and fold in the olive oil and lemon juice. Season with salt and freshly ground pepper. Tzatziki can be stored in a covered container in the refrigerator for up to one week.
