This wonderful roasted asparagus with feta dish, makes a great side to just about anything! The asparagus crisps and sweetens when roasted and the feta adds a nice salty contrast.
- 1 bunch of asparagus
- 1/4 cup olive oil
- 1/2 cup crumbled feta
- salt and freshly ground pepper to taste
Bend asparagus gently until the thick ends break off at their natural point. Wash well and pat dry. Place on baking sheet and drizzle with olive oil and a little salt and pepper, tossing them until the oil and seasoning is distributed well. Roast in a single layer at 425 F until golden. Plate asparagus and top with feta. Enjoy!
