This flavourful and very easy to prepare Greek apple cake recipe, makes the perfect coffee cake!
- 1 1/2 cup unsalted butter, melted and cooled
- 3 eggs
- 2 cups of sugar
- 1 teaspoon pure vanilla extract
- 1 teaspoon cinnamon
- 2 1/2 cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3 apples, peeled, cored and sliced (I use Gala- but Granny Smith apples are also a great choice)
In a large bowl beat the eggs with a whisk and mix in the sugar. Then add the vanilla, cinnamon and butter. Add the flour, baking soda and salt and stir well. Spoon batter into a greased 9 1/2 inch cake pan. Arrange sliced apples over the batter. Preheat oven to 425 degree F. and bake for approximately 1 hour.
